Fresh Pasta with a courgette, mushroom and yogurt cream

2 portions.

Ingredients:
2x veggie sausages (Linda McCartney chorizo and red pepper)
1x large courgette diced
7x chestnut mushrooms
250g full fat natural yogurt
250g fresh pasta
1 tbsp tarragon
1x whole lemon juiced
Handful of grated cheese
Seasoning
Method:
Place the sausages as per instructions in the oven
Meanwhile fry the sliced mushrooms and courgette in olive oil for 5 minutes
Add the tarragon, mixing for a few minutes before taking off the heat
Leave to cool slightly before adding the yogurt (so it doesn't separate)
Add a handful of grated cheese which should melt from the residual heat
Cook fresh pasta for ~4 mins
Mix everything together including the sliced sausage, lemon juice and seasoning
Serve with toasted sourdough bread.
