Red onion, Italian herb & cheese scones

Perfect for weekend baking.

Ingredients

330g Wessex Mill Strong White Flour

4 tsp baking powder

50g fridge temp Lurpak butter

1 tsp salt

2 tsp Italian seasoning

150g grate cheese

1/2 large red onion chopped finely and fried

120ml oat milk

1 egg whisked


Method

  1. Preheat the oven to 220C

  2. Sift the flour and baking powder in the bowl

  3. Cube the butter and add to the bowl

  4. With hands or a mixer turn the mix into a fine crumb

  5. Mix in the salt, Italian seasoning and grated cheese

  6. Fry the red onion in olive oil, after a few mins, once transparent add the oat milk and warm through

  7. Pour into the dry mix

  8. Mix with spoon and then with hands bring the mix together into a soft ball

  9. Lay on a floured work surface and cut into scone shapes

  10. Lay on a baking tray and brush some egg on the top

  11. Put in the oven for 30 mins
