Rice Vermicelli Noodles

This dish is perfect for students on a budget craving a delicious and easy meal.

Ingredients:

1 carrot grated

Thumb size piece of ginger grated

2 garlic cloves grated

6 mushrooms grated

Half a red pepper diced

20ml soy sauce

50g rice noodles

Splash of oat milk


Method

  1. Fry the carrot, ginger, mushroom and garlic for 8 mins. (Grating the veggies makes a huge difference to flavour).

  2. Add a splash of oat milk, trust me, and a good helping of soy sauce

  3. Cook rice noodles for 3 mins and mix it all in before serving
