Thai peanut, pumpkin & sesame seed noodles

Ingredients:
50g rice noodles
Sesame oil
Half a red onion
Thumb size piece of ginger grated
2 cloves of garlic grated
1 tsp brown sugar
3 tbsp pumpkin seeds
3 tbsp sesame seeds
Splash of oat milk
1 tbsp whole peanut butter
3 tbsp soy sauce
50ml water
1 spring onion
Method:
Fry garlic, onion and ginger in sesame oil until red onions turn translucent
Add the sugar and stir for a few mins to caramelise the onions
Add the sesame seeds and the pumpkin seeds
When you hear the seeds popping add a splash of oat milk and the PB
Pour in soy sauce and water and simmer while you cook the noodles
Mix and serve with spring onion (no seasoning needed)
