Thai peanut, pumpkin & sesame seed noodles

Serves 1

Vegan & GF

15 minutes

Ingredients:

50g rice noodles

Sesame oil

Half a red onion

Thumb size piece of ginger grated

2 cloves of garlic grated

1 tsp brown sugar

3 tbsp pumpkin seeds

3 tbsp sesame seeds

Splash of oat milk

1 tbsp whole peanut butter

3 tbsp soy sauce

50ml water

1 spring onion


Method:

  1. Fry garlic, onion and ginger in sesame oil until red onions turn translucent

  2. Add the sugar and stir for a few mins to caramelise the onions

  3. Add the sesame seeds and the pumpkin seeds

  4. When you hear the seeds popping add a splash of oat milk and the PB

  5. Pour in soy sauce and water and simmer while you cook the noodles

  6. Mix and serve with spring onion (no seasoning needed)
